I have to say that downtown San Diego has some of the best bars, lounges, restaurants, nightclubs, and much more than any city can offer. One of my favorite spots is the Neighborhood, which is located at 777 G Street. I love this place not only for the amazing food and beer selection, but also for the atmosphere. This place is always buzzing and the genius behind the amazingness is at it again.

His new creation is called Craft and Commerce, which is located at 675 W Beech Street in Little Italy. This place also was a very unique atmosphere and a nice dark pub like décor. The bartenders have an old newsy feel to them and are not bad on the eyes either ladies. This place had only been open a week and it was packed when we got there, so we put our name on chalk board and headed over to the bar. They have a unique menu selection of both food and drinks. They have some interesting and yummy beers, but I had to try one of their homemade champagne cocktails. I have to say it was very tasty and had several different types of alcohol in it.

Once we got seated, we shared their awesome sweet potato fries then my fiancé had their burger, which I tried also and it was very delicious. I had one of their salads and it was also delicious. I have to say it is a great place to go hangout with some friends or even for a date. I definitely plan on going their again very soon and you should check it out too!!

There is one thing that I could eat everyday and that one thing is a grilled cheese sandwich. I know that sounds very plain, but one of the best things about a grilled cheese sandwich is the many ways that you can prepare it. “The Classic” is to do 2-3 different types of cheese. My two favorite combos are sharp cheddar and pepper jack or sharp cheddar and blue cheese crumbles. Both are yummy!

Another way to make it I like to call “BLT minus the L.” Basically, it’s just your favorite cheese with bacon and tomato. My latest invention is called “The Wasabi.” This is made with your favorite cheese (that would be sharp cheddar for me) with a wasabi mayo. I make my own by mixing wasabi horseradish with lite mayonnaise. Be ready for a little bite!

Another item to include when enjoying this dish is something to dip your grilled cheese sandwich in. A few of my favorites are tomato soup, ketchup, ranch dressing, and blue cheese dressing. All are very delicious and a fun way to spice things up a bit.

One of my favorite places to go for a grilled cheese sandwich is the Cheese Shop located at 627 4th Ave., San Diego, 92101 (Gaslamp District). They put so much cheese onto the sandwich that it makes me melt plus you get to pick your favorite kind. They have so many to choose from since they are called the Cheese Shop. I also have to say they have killer breakfast food as well. So, go stop on by whether it’s for their awesome grilled cheese sandwich or any of their other food.

This is possibly my favorite dish to make. The lady love’s it, I love it, the dog and cats cant get enough of it, and it’s such a rag tag recipe anyone can make. And no, you don’t have to be Nicaraguan to make it. Though it does help.

Now keep in mind, if you are health conscious at all, this may not be the dish for you.

For those of you that say, “where’s the butter?!?”, This is for you!

Everything you need is in the picture. And keep in mind, you can add and subtract items as you see fit.

1 can Rosarita Beans
Medium Cheddar Cheese

With these all you’re doing is mixing it to your cheesiness.

For the Quesadillas you need:
Some Tortillas
Pepper Jack Cheese
Chicken
Fajita Mix
Olive Oil
Balsamic Vinegar
Butter

BEER – Just cause it’s good

First you have to cook the Chicken. And to do so you need to get the Fajita Mix ready. Now just follow the instructions of your favorite fajita mix. But what I normally do is replace the oil with Olive Oil, and the vinegar with Balsamic Vinegar. Cut up the chicken and let it sit in the mix while you prep everything else.

This is when I cut the cheese, get out the Tortillas and butter one side, and make sure I have everything I’m going to need lined up and ready.

Now warm up a pan at about medium heat and start cooking you chicken that’s been sitting in the Fajita Mix. Everyone likes their chicken a little different, so cook it to how you like it.

Once done, transfer the chicken to a bowl and get ready to make some quesadillas. You’re going to want to use the same Pan that you just cooked the chicken in. This way you can capture the goodness that’s left behind.

1. Slap a tortilla butter side down on to the pan. Spin it around to coat the pan evenly with the butter. (It will be hot)

2. Load half with Cheese, Chicken, Hot Sause or anything else you want for that matter.

3. Flip the Tortilla closed.

4. You want to cook each side evenly. I like mine a solid brown, and crunchy. But once again, cook it the way you like it.

5. Cut and Serve! Now I normally serve this with the bean/cheese dip thing that was made first with some chips. But feel free to do it your way.

Now Enjoy!
