Chicken Fajita Quesadilla (Nica Style)

This is possibly my favorite dish to make. The lady love’s it, I love it, the dog and cats cant get enough of it, and it’s such a rag tag recipe anyone can make. And no, you don’t have to be Nicaraguan to make it. Though it does help.

Now keep in mind, if you are health conscious at all, this may not be the dish for you.

For those of you that say, “where’s the butter?!?”, This is for you!

Everything you need is in the picture. And keep in mind, you can add and subtract items as you see fit.

1 can Rosarita Beans
Medium Cheddar Cheese

With these all you’re doing is mixing it to your cheesiness.

For the Quesadillas you need:
Some Tortillas
Pepper Jack Cheese
Chicken
Fajita Mix
Olive Oil
Balsamic Vinegar
Butter

BEER – Just cause it’s good

First you have to cook the Chicken. And to do so you need to get the Fajita Mix ready. Now just follow the instructions of your favorite fajita mix. But what I normally do is replace the oil with Olive Oil, and the vinegar with Balsamic Vinegar. Cut up the chicken and let it sit in the mix while you prep everything else.

This is when I cut the cheese, get out the Tortillas and butter one side, and make sure I have everything I’m going to need lined up and ready.

Now warm up a pan at about medium heat and start cooking you chicken that’s been sitting in the Fajita Mix. Everyone likes their chicken a little different, so cook it to how you like it.

Once done, transfer the chicken to a bowl and get ready to make some quesadillas. You’re going to want to use the same Pan that you just cooked the chicken in. This way you can capture the goodness that’s left behind.

1. Slap a tortilla butter side down on to the pan. Spin it around to coat the pan evenly with the butter. (It will be hot)

2. Load half with Cheese, Chicken, Hot Sause or anything else you want for that matter.

3. Flip the Tortilla closed.

4. You want to cook each side evenly. I like mine a solid brown, and crunchy. But once again, cook it the way you like it.

5. Cut and Serve! Now I normally serve this with the bean/cheese dip thing that was made first with some chips. But feel free to do it your way.
